Cozumel’s Tabasco Chef Excursion: Worth Every Penny?

We booked a cooking class in Cozumel thinking it would be a fun little excursion, and it ended up being one of the best memories of the entire cruise.

We were sailing on the Enchanted Princess for a seven night Western Caribbean cruise, and our friends Chet and Robin from Sea Leg Journeys were along for the trip. Robin had found this one, the Tabasco Chef Maestro cooking and tasting experience, and honestly, none of us really knew what we were getting into. That turned out to be the best part.

Getting There

Off the ship, we wandered around the Cozumel cruise port for a bit, found our tour group near the terminal, hopped on a motor coach, and made a short drive across the island to BLU, an exclusive beach club and water sports destination. Chef Luis met us at the door with a huge smile and a welcome drink, a non-alcoholic lemonade with a hint of wine that was cool and refreshing on a hot day.

The first thing that caught my attention wasn't the kitchen. It was the view. The cooking studio overlooked a dolphin experience and the turquoise Caribbean Sea. Looked more like an upscale beach resort than any classroom I've ever been in. If the food turned out half as good as the scenery, we were already in for a great day.

You're Actually Cooking, Not Just Watching

Now, I've watched plenty of cooking shows over the years. Watching someone cook is one thing. Being handed a hot pan and told it's your turn to be the chef, that's a whole different situation.

Chef Luis made it easy though. Every step explained clearly, fresh vegetables, local herbs, traditional spices, everything laid out right in front of us. We prepared each course ourselves under his guidance, and I'll be honest, there were a few moments where my technique was questionable enough that Terri had to step in and take over. The chef smiled patiently the whole time, and to his credit, never once looked genuinely worried. At least not on the outside.

What I really appreciated about this excursion is that you're not standing around watching somebody else cook. You're in it. And somewhere between the mixing and the seasoning and the laughing, the whole room started to feel less like a class and more like a big dinner party. That's when you know something's working.

The Food

After all that work, we finally got to eat what we made. And wow. Fresh, authentic, perfectly balanced flavors. This wasn't a tourist meal. These were real Mexican recipes made with real local ingredients, and you could taste the difference. I loaded up my taco with some pickled onions and gave it a shot. Really good. Each course kept getting better, right up through dessert, which was a sweet potato dish. Interesting choice, but since I made it, I ate it, and yeah, it was pretty good.

Comparing plates around the table was one of the funnier moments of the day too. Some of them looked absolutely restaurant quality. Others had a little more personality. Taste matters more than appearance, and that's what I kept telling myself about mine.

The Thing That Made It Special

I've done a lot of cruise excursions. Beach days, snorkeling trips, boat rides, a few unexpected adventures. They've all been great. But this one's going to stick around longer than most, and I think I know why.

Food has a way of bringing people together in a way that a beach or a boat ride doesn't quite do. Spending a morning cooking authentic recipes alongside friends, under the guidance of a chef who clearly loves what he does, and doing it all while overlooking the Caribbean, that's a different kind of memory. We were experiencing Cozumel in a way most visitors never get to.

And then Chef Luis sent us all the recipes by email after the fact. So now I can try making these at home. Whether they taste as good without him standing next to me, well, that's another story.
